I lived in Paris ...Thank you for the kind comments! I lived in Paris for a few months a while back, and my hostess would buy those prepared paupiettes. They were stuffed with sausage meat, and she would braise them with wine and mushrooms. That's how I made them in my restaurant, but the stuffing would be the veal trimmings ground up with some herbs, a bit of bread crumbs and an egg. <br /><br />I thought about that hand grinder just now as I ground up some sirloin for hamburgers using my electric KitchenAid attachment. I feel so spoiled!<br /><br />If you don't die of happiness eating that chocolate meringue cake, then there's something wrong with you! I chose this post to make a comment just...Hi Gina <br /><br />I chose this post to make a comment just because it mentions French women living in Montreal:)) I am a montreal wanna be chef infatuated with the kitchen and with a huge crush on anyone who has an education as a professional chef. As a result, I read all your posts in one night!! I love everyone one of them!! So a quick note to thank you for sharing your experiences and your detailed recipes. I have already started on your chocolate meringue mousse cake (I am using your recipe for chocolate meringue discs with my own mousse recipe which uses cream). Lastly, although we can get many prepared foods here in Montreal (not junk food, but scratch recipes where all you have to do is cook) I have yet to see des Paupiettes de veau...although the idea sounds like a good business plan!! I make these stuffed with Brie cheese and spinach - I serve them in a creme de champignons style sauce. Delmanoreply@blogger.com
